vinification process
According to the longstanding history of the Bullman vineyard, wines are still vinified according to traditional methods. However, this doesn’t imply that modern technologies are not used! To produce high quality and elegant wines, the first step is to produce high quality grapes. That’s why caring for our vines and paying special attention to specific foliage techniques as well as fruit thinning is of upmost importance for us. During the year, we intently reduce our yield by thinning the fruits and cutting back foliage, so that we can achieve a perfect balance between the development of a specific aroma and protection against the sun! The heart of our vineyard consists of a vaulted cellar, which was built in 1753. It has been upgraded to contain the latest high-end winemaking technologies and has a capacity of about 35000 liters. We harvest our grapes exclusively by hand beginning in September until well into November. The grapes are then gently crushed and fermented in a cool (but not cold) place to preserve all their aroma. Depending on the wine, it is aged in a metal or wooden barrel for at least 3 and up to 24 months. Our cellar is climate controlled, and its constant temperature of 12°C allows for a regular and steady aging of the wine. Due to these perfect conditions and the skill of our oenologist, our vineyard can develop not only fresh, elegant and aromatic wines, but also wines with a great maturing potential.
